Each Christmas, at our Annual Christmas Restorative Yoga class, we enjoy a delicious supper. It is actually hard to say which is more popular, the yoga or the supper...
We always have requests for the recipes so here they are. Chocolate truffles, Anneke's Spiced Nuts and Strawberry Cooler. We hope you enjoy them with your family over the holidays.
'Chocolate' Truffles
80gm pitted dates
110gm sultanas
1 tbl boiling water
1 tbl unsweetened cocoa powder
45gm Almond meal (or you can mill your own almonds)
60gm desiccated coconut
Extra coconut for rolling the balls in
Mill almonds if using whole – set aside.
Place dates and sultanas into food processor and process until finely chopped.
Add boiling water and leave to soak for a few minutes.
Add cocoa powder, almonds and coconut, and process until well mixed.
Roll into balls and roll in extra coconut.
Store in an air tight container in the fridge for up to 2 weeks.
Makes about 16 walnut sized balls.

Anneke's Spiced Nuts
30 ml Olive Oil
1 tbsp paprika
30 ml maple syrup
1 clove garlic, finely chopped
2 teaspoon sea salt flakes
½ tsp chilli powder
¼ tsp ground black pepper
500g mixed unsalted nuts of your choice (my mix had macadamias, walnuts, almonds and cashews)
Preheat oven to 180. Line an over tray with baking paper.
In a large saucepan put all ingredients except nuts and heat over a LOW heat for 1 minute
Add nuts and stir thoroughly until the nuts are coated
Spread evenly onto tray and bake for 10 – 15 minutes (check after 10 they burn easily)
Allow to cool before eating – the will be very very hot when they first come out of the oven – be careful!
Strawberry Cooler
50g Sugar - Optional (I don't use any)
12cm piece of ginger
300g watermelon
300g hulled strawberries
Juice of 1 orange and 1 lemon (sometimes I don't have these and it is still great tasting)
150g ice cubes
Sparkling mineral water (or I'm told champagne is good too)
Place sugar and ginger into a food processor and process until fine
Add fruit, juice and ice and blend until a smooth consistency
Add mineral water and blend until combined
It is a terrific Christmas/summer drink.
